Low Calorie Chocolate Truffle Recipe
We all know that February is all about chocolate. It's not just Valentine's Day, it also happens to be my husband's birthday. What better way to say I love you than with chocolate! Cacao, cocoa butter, and sugar are what make chocolate rich and decadent. They are also what make chocolate a high calorie food. Below is a chocolate truffle recipe that has virtually no fat or sugar. The key ingredients that give the truffles their essential flavors are cocoa powder, PB2 with Chocolate, and no calorie sweetener.

1/2 cup PB2 with Chocolate

In a small bowl, add the PB2, instant coffee and water. Stir together until mixture is smooth. Add cocoa powder and no calorie sweetener. Stir until all the ingredients are combined and form a thick paste. Divide chocolate mixture into eight equal parts. Roll the chocolate mixture around in the palm of your hands to form smooth balls. Let sit in the refrigerator for 30 minutes. Sprinkle with love. Serve.

Barbara's Tips
If your cocoa powder is lumpy, sift it before adding it to the truffle mixture. It will yield a smoother mixture.
The instant coffee is added because it enhances the taste of chocolate.
The truffles can be rolled in some cocoa powder to give them a fancy "chocolate shop" look. They can also be rolled in other toppings like powdered sugar or shredded coconut or crushed nuts. Note that this might change the calorie count slightly.
Essential Flavor Ingredients
PB2 is powdered peanut product that contains 85% less fat than traditional peanut butter but still has the taste and nutrition of peanuts. PB2 with Chocolate is PB2 with added premium chocolate cacao powder. The powder is rehydrated with water to create a smooth spread similar to peanut butter. It is high in protein and low in sugar and carbohydrates.
No calorie sweeteners have come a long way since the 70's. Splenda is a sweetener derived from sugar so it tastes like sugar, but has no calories. It's a great alternative to sugar in almost any recipe. You won't be able to tell the difference.
Cocoa powder is what remains when cocoa butter is removed from the cacao bean. As a result it's low in fat but rich in chocolate flavor.
