To make dishes that are still flavorful and satisfying, I strip down dishes to their "essential flavors". These are the key ingredients that provide the flavors we love so much about a dish. Tortilla Pizza for Your Next Game Day Get-Together

Whether you like football, baseball or basketball (or something else entirely), sports are a good excuse to invite some friends over to watch the game and eat some food. It’s typical to serve appetizers and beer at these game day get-togethers. The appetizers usually consist of fried foods and creamy dips and chips. Below is a recipe that is a twist on a pizza that can be served as an alternative to all those heavy, greasy eats. Tomatoes and oregano give the pizza the traditional flavors we associate with pizza. A tortilla base and low fat cheese keep this pizza lite. Cut it into wedges for a great appetizer or serve it whole as a main dish.

Tortilla Pizza Ingredients
Pre-heat a non-stick skillet pan on medium heat. Place the tortilla in the dry, non-stick skillet and toast for a couple of minutes until it is golden brown on one side (approx 2-3 minutes). Flip the tortilla and toast the other side until golden brown (approx. 2 more minutes).

Pre-heat oven to 350 degrees. Place the tortilla on a sheet pan. Slice the Roma tomato into thin slices (approx. 1/8”). Top the tortilla with the sliced tomatoes, covering the entire surface area of the tortilla. Sprinkle the tomatoes with the salt and oregano. Top the pizza with the shredded mozzarella.

Bake the pizza in the pre-heated oven on the center rack until the cheese is melted and slightly browned (approx. 5-7 minutes). Serve.
Barbara's Tips
Browning the tortilla before baking it makes the tortilla crispy and prevents it from getting limp and soggy from the moisture of the tomatoes.

Low fat cheese is a good option for this recipe. When melted, you can’t tell the difference from the full fat cheese.

Oregano Oregano is an herb, used for the flavor of its leaves, which has an aromatic, warm and slightly bitter taste. It is more flavorful when dried than fresh. Oregano is the staple herb of Italian American cuisine and is a classic herb in pizza sauce.
