In a small bowl, combine the Greek yogurt and instant pudding mix. Stir together until smooth and thick. Add the cheesecake yogurt and stir until well combined. Line four martini glasses with the sliced strawberries. Fill each martini glass with 1/4 of the yogurt mixture. Top each parfait with a fresh strawberry. Serve.
Barbara's Tips
The instant pudding mix is used to thicken and intensify the flavor of the plain yogurt. It can be used with any milk-based yogurt but doesn’t work so well with soy based or coconut yogurts.
The plain Greek yogurt adds thickness and richness to the “pudding”. It also helps the instant Jell-O mix reach its full thickening potential.
This recipe doesn’t need additional sugar since the pudding mix and flavored yogurt provide plenty of sweetness already. But if you like your desserts even sweeter, feel free to add some no calorie sweetener to it.
