June is the most popular month of the year for weddings. And along with weddings come bridal showers. Usually this means lots of eating and drinking and desserts that can add up to a lot of calories. But celebrating doesn’t always have to go hand in hand with overindulging. Below is a strawberry cheesecake parfait that is rich and decadent but only you will know how healthy it really is. Cheesecake flavored yogurt and instant pudding mix make a rich pudding base for this dessert and give the dessert the tangy and sweet strawberry flavor we usually associate with cheesecake. Fresh strawberries give the parfait a fresh summer flavor. Serving this dessert in a martini glass makes it elegant without adding any calories. It looks good enough to serve as a dessert for any occasion.

3 containers of fat free, sugar free cheesecake yogurt

1 container of fat free, plain Greek yogurt

1 Tbsp of fat free, sugar free cheesecake instant Jell-O pudding mix

1 eight ounce container of fresh strawberries, sliced

In a small bowl, combine the Greek yogurt and instant pudding mix. Stir together until smooth and thick. Add the cheesecake yogurt and stir until well combined. Line four martini glasses with the sliced strawberries. Fill each martini glass with 1/4 of the yogurt mixture. Top each parfait with a fresh strawberry. Serve.
Barbara's Tips
The instant pudding mix is used to thicken and intensify the flavor of the plain yogurt. It can be used with any milk-based yogurt but doesn’t work so well with soy based or coconut yogurts.
The plain Greek yogurt adds thickness and richness to the “pudding”. It also helps the instant Jell-O mix reach its full thickening potential.
This recipe doesn’t need additional sugar since the pudding mix and flavored yogurt provide plenty of sweetness already. But if you like your desserts even sweeter, feel free to add some no calorie sweetener to it.

Cheesecake flavored yogurt really tastes like cheesecake! Sugar-free and fat free versions have fewer calories than their full fat versions but are still sweet, rich and creamy.
Instant pudding mix can be used to thicken and add flavor to any dairy based yogurt such as non-fat, plain Greek yogurt.
