Take These Grilled Vegetable Wraps to your next Picnic

Summer is a great time for eating outdoors. Whether you’re going to a picnic, a tailgate party or attending your kid’s soccer game, food is always part of the fun. But there’s no need for fried chicken, creamy potato salad or cheesy pizza. Below is a recipe for vegetable wraps that are full of flavor thanks to some grilled vegetables. Red bell peppers and zucchini add sweetness to these wraps. Eggplants make them chock-full and meaty. As a bonus, they can be made ahead of time!

Vegetable Wrap Ingredients
Cut the bell pepper in half and remove the seeds. Slice the bell pepper into ½ inch strips. Cut the eggplant in ¼ inch discs. Cut the zucchini into ¼ inch diagonal slices.

Heat up a non-stick grill pan on medium heat. Spray the grill pan with some non-stick cooking spray. Place the bell pepper strips, zucchini and eggplant on the grill pan. Cook for approximately 3-5 minutes until grill marks appear. Turn over the vegetables and cook another 3-5 minutes. Remove vegetables from the grill pan and place them on a plate to cool. Add salt.

Warm the tortillas in the microwave oven on high for 20 seconds. Place a quarter of the vegetables on each tortilla, eggplant slices on the bottom, followed by the zucchini slices and topped with the bell pepper strips. Wrap the tortillas around the vegetables. Cut the wraps in half and serve.

You can grill the vegetables on an outdoor grill with the same results.

If your grill pan is too small to accommodate all the vegetables at once, you may have to work in batches.

Heating up the tortillas in the microwave oven makes them soft and pliable and easier to roll.
