Cool off this Summer with Non-Dairy Strawberry Banana Ice Cream

It’s hot outside! What better way to cool off than with some ice cream? My husband is lactose intolerant so traditional ice cream is off the list. Plus, it’s loaded with sugar and fat! Below is a recipe for ice cream that has no milk or cream. It only has two ingredients and doesn’t require a fancy and expensive ice cream machine to make. The bananas give it the smooth, creamy texture we expect from ice cream. The strawberries keep it fresh and lite. When you see how easy this is, you’ll be making it all summer long!

Strawberry Banana Ice Cream Ingredients
Wash the strawberries and cut off their green tops. Peel and slice the bananas into one inch slices. Place the strawberries and bananas in a single layer on a sheet pan, ensuring the pieces of fruit are not touching one another. Place the sheet pan in the freezer until the strawberries and bananas are frozen.

Place the frozen strawberries and banana slices in a food processor and puree until the mixture is smooth and creamy (approx 2-3 minutes). Scoop the ice cream into two separate serving bowls. Top with a strawberry slice. Serve.
Barbara's Tips
It’s best to eat this ice cream as soon as it’s made. But you can keep it in the freezer for up to an hour if needed. Any longer and the berry mixture will freeze into a solid block.

It’s important to use really ripe bananas for this recipe, otherwise the ice cream won’t be as smooth and creamy as desired.

It takes a while for the bananas and strawberries to turn into a smooth and creamy mixture. Keep processing the frozen berry mixture until a smooth texture develops. It will happen. You may need to stop the food processor a number of times and scrape down the sides of the bowl to get the frozen mixture back down onto the blades.

The bananas and strawberries should be sweet if they are ripe. But if you like your ice cream a little sweeter, you can add some no calorie sweetener to the mixture.

Bananas Bananas are a fruit with a firm and creamy flesh. When ripe, their skins are a deep yellow and their flesh is soft and sweet. They are grown in tropical climates so we often associate them with island vacations. They are a great complement to the strawberries in this dish.
