Preheat oven to 350 degrees. Place the halibut on a sheet of aluminum foil. Salt and pepper the halibut. Top the halibut with a slice of lemon and a sprig of thyme. Wrap the halibut in the aluminum foil, ensuring any juices from cooking will not escape. Place the foil wrapped halibut on a sheet pan and bake in the oven for 12-15 minutes. Remove the halibut from the oven and unwrap the foil. Place the halibut on a dish. Serve.

Make sure to buy a pice of center cut halibut. These pieces are thicker than the tail end pieces and therefore stay moister when cooked.

Use fresh thyme for this dish. Unlike dried thyme which has a grassy taste, fresh thyme has a fresher, almost minty taste which is enhanced during the steaming process.
