Satisfy your Craving for Comfort Food with Cauliflower Mushroom Risotto

When the weather is cold outside, it’s tempting to just stay indoors and eat warm, rich comfort foods like meatloaf and gravy, creamy mashed potatoes, or cheesy lasagna. If you’re like me, winter is not your season. That’s why I moved to San Diego! But if you can’t escape the cold and are stuck indoors, it’s a great time to make a nice home cooked meal. Below is a recipe for cauliflower risotto that will satisfy your cravings for comfort food but won’t pack on the pounds. The cauliflower provides a nice rice-like texture without all the calories of traditional rice. The mushrooms give the dish a warm earthy flavor and the cream of mushroom soup makes the dish rich and creamy, without adding butter or cream.

Cauliflower Mushroom Risotto Ingredients
Cut the cauliflower into small pieces and place the pieces in a food processor. Pulse until the cauliflower resembles tiny grains of rice.

In a large non-stick pan add the mushroom slices. Cook the mushrooms on medium heat until the mushrooms are slightly browned (approximately 3-5 minutes). Add 1 cup of water to the pan. Add the cauliflower and salt to the mushrooms. Cook for an additional 5-10 minutes until the cauliflower is fully cooked. Turn off the heat. Add the cream of mushroom soup to the mixture. Stir until all ingredients are combined. Spoon the cauliflower mixture onto a plate or bowl. Serve.
Barbara's Tips
Cook the mushrooms in a non-stick pan on low heat without oil or salt. A dry pan prevents the mushrooms from getting watery and allows them to brown instead.

The cream of mushroom soup not only adds a nice mushroom flavor to the mixture but also makes the mixture creamy, simulating a risotto-like texture.
